Today marks two years that I’ve been vegan— yay!! :)
I’m off to France this weekend and will be there for almost a month! I have lots of vegan places I’m planning to check out… so expect fun posts when I return! :)
I know this is a weird thing to post… but I am excited about it! I recently had blood work done and these were my cholesterol results! When my doctor handed them to me and started explaining everything, the first thing he said was “Well, I must admit when I saw your results I thought to myself, ‘it seems like I need to look into becoming vegan’”. WIN! :) I know that the HDL level can be higher… but the rest of them are basically in the best possible range! Horray! :)
Saw this raw vegan cheesecake by Earth Cafe at my local health food store and decided to give it a try. I was a bit apprehensive, but it was amazing! It was really rich so I definitely didn’t eat it all at once. The blueberry flavor was fantastic. It was pretty expensive ($5-6) so I doubt I will be purchasing this product often… but perhaps as a once and a while treat!
My friend Bethany came to visit so we decided to go to Ann Arbor and visit Seva— one of my favorite places in the area to eat! As I have posted about before, the General Tso’s Califlower cannot be passed up— so we had that for an appetizer. We couldn’t decide on just one entree so we both picked one and shared: Grilled Veggie Fajitas and an amazing Thai Chickpea Burger with Sweet Potato Fries. We were so full afterward but it was definitely amazing!
I know that Easter has now come and gone… I’m sorry this is so late! But my parents asked me where they could get some awesome vegan chocolate to have for Easter (they are into the whole basket/present thing and were lost as to what to get me). Boy, did they figure it out though. Look at this feast!

Thank you Vegan Cuts Snack Box for introducing me to this! It is just as the package says: CRAZY GOOD! It is a perfect caramel corn that isn’t so sweet that it is sickening. I love it!
I’ve been hearing a lot of buzz about Beyond Meat for a while now…. and it’s finally popping up in the Whole Foods near me in a few ways! Above, you can see a tasty wrap that I picked up. I like getting these kinds of sandwiches at Whole Foods so that I can try out the product and then replicate how they present it later myself. The Beyond Meat “chicken” was really good! It had a tougher texture than any other chicken substitute that I’ve had before which was strange at first… but I enjoyed it.
I also found Beyond Meat in the prepared foods section (sorry that I don’t have a photo)! Whole Foods was selling a General Tso’s “chicken” mixture with the Beyond Meat breaded, peppers, broccoli and a tasty sauce.. so of course I bought some to try. It was delicious and would definitely be easy to replicate. They were also selling a Sonoma “chicken” salad that didn’t really look like my style… but still awesome that it exists!
As you all know, I am in love with Vegan Cuts. I love finding fun new products to try out via their site and snack box. One product I saw that I decided to try out was the Chia Cheeze Sauce from Heidi Ho Organics. In college, chips and queso was basically a staple (not a good one… but hey, it was college.. what did I know? haha). Since I am a lover of Mexican food, I wanted to give vegan nachos a go. You can see the photo above of the nachos that I made for myself and a few friends recently.
Ingredients: tortilla chips, chia cheeze sauce, vegan taco filling by Fantastic World Foods, onions, lettuce and taco sauce. They were so delicious! I really liked the chia cheeze sauce… I did add a bit of taco seasonings to jazz it up a bit more… but overall I am really happy with it!
I apologize for the awful photo… but I was so excited to see that Kroger has their own line of all-vegan meat substitutes now! They have: Meatless Crispy Tenders, Meatless Crumbles, Meatless Crispy Chicken Patties, Meatless Breakfast Patties, Meatless Patties, and Meatless Griller Strips. For me, it’s super exciting to see a major grocery chain like Kroger having products like this on their own line.
I now forgive you, Kroger, for the few months that you took Daiya off the shelves where I lost faith in you. All is good now. :)
These are SO ADDICTING. Oh man, they are good. I took some to my parent’s house to let them try… and let’s just say that I didn’t have any to take back home haha
In a few weeks, I will be going to France to chaperone a study abroad trip through the university where I work! I will be in France for three weeks: the majority of my time will be spent staying in a small town near Tours but we will be in Paris for a long weekend as well. I need help! I’ve been doing research of places to eat in Paris, etc… but would love any advice you all have. While I’m near Tours, we are being fed by a local restaurant that has already been made well aware of my restrictions and they are happy to oblige which is awesome. For me, I’m most excited I think because I rely too much on processed foods and I know this is going to push me to focus more on the whole foods aspect of being vegan since I’m not sure I will have much choice. Yay!
As for when I’m in Paris, I know there are a lot of cool places I want to check out but would love your thoughts too if you’ve been there or heard of awesome places to go. I went to Paris a few years ago when I was still vegetarian, so I’m pretty sure I fell back on bread/cheese to get through a lot haha.
Any advice you can give is much appreciated! As a side note, I did take French for quite a few years.. so I should be able to get across what I need to.. so that should help! :)

-I apologize that this has been mostly product reviews… I had an incident with my stove and now I don’t want to use it so I haven’t been doing a lot of cooking. Good thing is- I’m moving in the next few months to a new place with my friend who has decided to become vegan. Sounds like a good situation to me! :)
